Rylstone Estate Aviatrix Cabernet-Shiraz 2021

A medium-weighted, concentrated blend of 80% Cabernet Sauvignon and 20% Shiraz, co-fermented and aged eight months in French oak. It showcases brilliant black fruit with complexity from elderberry, red plum, dried sage, and spice notes of liquorice root and clove. The finish is defined by a textural structure, featuring a sandy tannin quality and a crisp crunch of acid. A classic and savoury Australian red.
